Description

This Lot is a concession contract Operation of the café and bar across daytime sightseeing cruises, commuter sailings and seasonal evening and premium cruises on two vessels - the Snowdrop and Royal Daffodil. The successful provider must offer high-quality, well-presented food and drink from small servery areas (no commercial kitchen) deliver smooth service in a mobile variable-demand environment, maintain strong staff standards and compliance and introduce creativity, sustainability and themed experiences. The successful Supplier will be required to offer bar services during any events that fall under Lot 2 Special Events.

Bidders will need to complete an initial PSQ stage on a Pass/Fail basis. Bidders who are successful will be invited to a ITT stage where they will be required to respond to Quality & Commercial questions they will need to submit. We will then after moderation short list bidders to complete a presentation day where they will be required under controlled conditions present dishes to a evaluation panel for scoring
